This is such a simple but beautiful dish served on gem lettuce boats. It is super lean, healthy but very tasty.

110g cooked chicken
120g veg / salad including: Gem Lettuce, Spring Onions, Avocado - roughly half

Method:
Shred or cut your cooked chicken
Finely slice your spring onions and avocado
Use your gem lettuce leaves as a boat and layer up chicken, chives, spring onions and avocado into them
Serving:
Serve with mint of coriander
