Inspired by wonderful Narelle Chidwick (@midlife.reallife) this can be absolutely The Human Being Diet friendly if you leave the yoghurt out.
This recipe is really warm and hearty with the lovely filling pancakes. It is also super fresh and zesty with the avocado, herbs and spices.
This recipe makes four pancakes.
Ingredients:
80g gram flour
Small pot of Greek style natural yoghurt
Zest and Zing Garlic Chilli
Coriander
1 avocado
Cherry tomatoes
Garlic
Lemon
Olive oil
Gram Flour Pancakes Method:
Weigh out gram flour into a small mixing bowl and add the small pot of Greek style natural yoghurt
Add salt and garlic chilli
Add chunk of coriander
Add a drizzle of water
Mix up the batter
Continue to add a drizzle of water at a time so it is nice and thick (as you don’t want it to spread too much)
Add olive oil to the pan
Add olive oil to the pan
Fry two table spoons in olive oil on high heat
Flip halfway through
Flip halfway through
Serve when cooked
Avocado Mash Method:
Into a bowl add garlic, tomatoes, avocado, lemon and smash up
Add more coriander, salt and garlic chilli
Serving:Add more coriander, salt and garlic chilli
Serve pancakes with avocado mash on top
Quick note that the avocado mash will go off quickly so enjoy while fresh!
